He wants to taste the true character of the grapes. While many wine makers in the Lodi Appellation produce a very ripe style of wine, Antonio's wines are flavorful, elegant and age very well.
A ntonio Pasos was born in Monterey California and his dream to make wine and have his own winery began with his work in family vineyards in Madera, located in the southern San Joaquin Valley. Lupe, Antonio’s father, managed the vineyards for many years.
Antonio developed a deep passion for the grape, wine and wine making. After completing his formal education in wine making at California State College Fresno, he went to work for E&J Gallo, Fenestra Winery and others. In early 2004 he moved to the Lodi Appellation to start his name sake winery Pasos Vineyards. There, working with Mediterranean varietals that do well in the San Joaquin Valley he has built the premier boutique winery of the Lodi Appellation. "
Antonio buys and grows only the best grapes and uses new French, Hungarian and American oak barrels for his small lot production. His motto is simply: "Always put quality first.
